Holiday Baking....

There are a few things I truly love to do...making beautiful things brings joy to me. This year I waited to the last minute to even get started. Mostly because the Spirit of Christmas seemed to be missing. What I discovered was, that the Spirit was always here. I just had to open my heart and let it in. I made my kitchen my "Christmas" place. I turned on my favorite Christmas music and started creating! This year I decided to make all of our neighbors plates of goodies. Texas brownies and my favorite butter cookies pressed through my cookie press. It was a simple gesture to give these to our neighbors. Most of the time we simply pass by with a simple "Hello". But, they are our neighbors. I appreciate that they are around looking out for our children and are kind to us.

My next creation was making Christmas gifts for the girls I teach
at church in my Young Women's class. I decided to go with the homemade gift. My kitchen turned into canning central. I love canning cakes in jars. So, with the holiday season upon us, I knew that Gingerbread in a Jar was the treat to make. Canning cakes in a jar is simply and is something anyone can do. I have recipes for Applesauce Cake, Brownie Cake and Gingerbread in a Jar. This past year I made, 50 Applesauce Cakes in a Jar for our Barnyard Bash for a Visiting Teaching Conference at church. After the jars seal, you can decorate them anyway you please. Berkley chose Christmas Penguin material for us to make toppers out of. Penguins happen to be her favorite.

Chocolate covered pretzels are a favorite of mine as well. I always make them to celebrate the girls birthdays in my class at church. But, for Christmas I felt like I needed to add them to the bag. So, I made white chocolate flowers. This is one of my favorite molds.

That is all the baking I did this year. Being a diabetic, baking can be hazardous to my health. I wish I could bake with out tasting everything 20 times. My family suffers when my blood sugar goes to high. I hope that those who enjoyed these treats know how much I loved making them to share with them. Sharing these simply treasures brought the Spirit of Christmas to my soul!

The Penguins reminded me, my Sister Christina was into Penguins big time when she was a teen and it was all because of Bishop Brown. He gave her one sometime and she decided that she had to collect them. I think as it's highest she had 100+. I'm just as bad with teddy bears, if you remember.
